Resep Sop Iga Bakar • Marimasak

SOP IGA BAKAR

BAHAN :
1 kg iga sapi, cuci bersih, rebus sebentar di air yg sdh mendidih, buang airnya tiriskan, rebus kembali dng air yg baru, buang busa yg mengapung, tambahkan 1/2 buah bwng bombay iris kasar, 1 batang daun bawang iris kasar, 3 batang seledri iris kasar, rebus sampai empuk, angkat iga sisihkan kalduny

BUMBU UNGKEP IGA : (haluskan)
6 butir bawang merah
5 siung bawang putih
sdkit jahe, lengkuas dan kunyit
3 butir kemiri sangrai
1 sdt ketumbar sangrai

BUMBU TAMBAHAN
3 lmbr daun salam
4 lmbr daun jeruk
1 sdt air asam jawa
Garam, kaldu jamur, merica dan sdkit gula merah
2-3 sdm kecap manis
Sdkit margarin/mentega

BUMBU KUAH : (haluskan)
5 siung bawang putih
3 butir bawang merah
sdkit jahe dan pala bubuk
merica hitam/putih

2 cm kayu manis
Daun bawang iris
Bwng merah dan putih goreng

Sayuran sesuai selera (me.. wortel, kentang, buncis dan kol).

CARA MEMBUAT
IGA BAKAR :
1. Ungkep iga dng bumbu halus dan bumbu tambahan kecuali kecap dan margarin, beri air sampai agak terendam, masak sampai bumbu meresap dan air menyusut (cek rasa sesuaikan selera), beri kecap manis aduk rata dan masak lg sbntr sampai mengering
2. Panaskan teflon/wajan datar beri sdkit margarin, panggang iga dng api sedang cenderung kecil sampai kecoklatan

KUAH :
1. Tumis bumbu halus, kayu manis dan irisan daun bawang sampai benar2 matang, masukkan kedalam air kaldu rebusan iga
2. Beri sdkit bawang merah dan putih goreng, bumbui garam, kaldu jamur dan sdkit gula, masukkan sayuran dimulai dr yg keras dl, masak semua sampai matang .

Sajikan iga bakar dan kuah dng taburan bwng goreng jangan lupa sambal dan jeruk nipisny 👌 .
