Makan kepiting dan kerang nggak mungkin bisa sedikit apalagi kalo makan di resto selain muahal, pasti menderita nahan jaim, karna maluu makan belepotan, jilat2 tangan sambil mencep2. Duh dek piye yo..kesane ki nggragas..saru wes pokoke. Ini kepiting 2kg, kerang srimping dan kerang hijau, karna kurang suka sama kerang dara. Dimasak saos padang ala rumahan karna tidak menggunakan saos botolan, saos tiram, kaldu bubuk sama sekali hanya menggunakan jus tomat murni, air kaldu dan bumbu pawon..jadi mau makan banyak2 kita nggak was-was karna bener2 bebas MSG dan bahan pengawet dalam saos botolan. Jadi seimbang maan seafood sambil makan jus tomat. Beli kepiting dan kerang di Pasar Ikan pantai depok Bantul. Iki nek jajan neng resto seafood Palagan kono iso entek 1jetong loh. Tips : pilih yg masih hidup dan kepiting lebih baik digoreng, rasanya lebih gurih, kalo dikukus/direbus, ngilang dagingnya...
Kepiting mix kerang Saos Padang
1 kg Kepiting
8 buah tomat blender halus
1 jari lengkuas geprek
5 br daun salam
5 lbr daun jeruk
1 buah bawang bombay rajang tipis
2 btg daun bawang iris tipis
50 gr gula merah
Air kaldu ayam secukupnya
2 sdm tepung maizena/sagu larutkan dengan sedikit air untuk mengentalkan
Garam secukupnya
Bumbu halus :
1 sdm merica
1 jari kunyit bakar
6 butir kemiri sangrai
3 batang serai ambil bagian putihnya
10 cabai merah
8 bawang merah
10 bawang putih
4 cabe rawit
1 jari jahe
Cara
Bersihkan kepiting lalu lumuri dengan air jeruk nipis.. Siapkan bahan dan bumbu halus. Panaskan minyak dalam wajan, goreng kepiting sampai matang lalu tiriskan. Panaskan wajan beri minyak, tumis bumbu halus sampai harum. Masukkan bawang bombay, lengkuas, daun jeruk, daun salam, tambahkan air kaldu
Masukan jus tomat aduk rata, masukkan gula dan garam lalu koreksi rasa. Masukan kepiting dan kerang yg sudah direbus lalu aduk sampai bumbu agak meresap lalu kentalkan dengan maizena. Lalu beri irisan daun bawang. Kepiting siap disajikan..
